Storage

Where can I store my fresh potatoes?
The vitamins in the potato are sensitive to heat, air, light and water. Therefore, you should store the potatoes in a chilly, dark and dry place. A temperature of 44.6°F is ideal to store the potatoes (your refrigerator is usually colder than this). If the potatoes are stored at too cold of a temperature, they will dry up faster and the starch will transform to sugar. The potato then will have an unpleasant sweet taste. When frying the potatoes, they will also be a darker brown color. If the potatoes are stored at a warm temperature for too long, the tubers will start to sprout and become soft.

Should I wash my potatoes before storing?
Before storing spuds, look them over and use any bruised ones first. Since dampness can cause decay, it is best not to wash spuds before storing.

Where can I store my potato granules and how long can I store them?
The potato granules have a shelve-life up to 23 months and they do not require refrigeration but should be stored in a dry air tight container.

Nutritional Information

How can I get the most nutrition out of the potatoes?
To preserve the potato's abundant nutrients, cook with the skins on whenever possible and steam, rather than boil potatoes. Save the cooking water after steaming potatoes, as some of the potatoes' nutrients will have leaked into it. Use it to make gravies or bread, or to moisten mashed potatoes.
